team your potato (can microwave), then place steak in oven to broil. Broil steak until all pink is gone. Just before steak and potato are done, put vegetables in to steam (about 6-8 minutes).

Roast Beef & Vegetables with Garlic Sauce
2 ½ pounds Roast Eye of Round Lean
1 med. Garlic clove
1/8 tsp. salt
1/8 tsp. black pepper
1 Tbsp. canola oil
2 med. Garlic clove, minced
1 med. Garlic, whole
10 med. Carrots
8 large red Potatoes
1 Tbsp. milk (2%)
¾ cup Sour Cream (fat-free)
20 slices Wheat Bread (lite)
10 tsp. Weight Watchers Margarine
Preheat oven to 325. Rub beef with garlic clove cut in half. Sprinkle with salt and pepper. Place beef on rack in a roasting pan. In a small bowl, combine oil and minced garlic. Place whole garlic bulb in a small baking dish. Place beef, garlic clove, carrots and potatoes (cut up) in oven. Roast for 50 minutes. Brush beef with garlic mixture. Continue roasting beef until well done (all pink is gone). Remove beef and vegetables, place in a large bowl. Slice top of garlic bulb, scoop out roasted garlic. To prepare sauce, in a small bowl combine roasted garlic, sour cream and milk. Mix well. Cut beef into slices, arrange on a serving plate. Serve sauce on side. Serve immediately. Serve 2 sides of bread and one teaspoon of margarine per person.
